one of my all time faves 🤌 get more of my favorite summer pool party snacks pinned on my IG (same handle)—I have a lot more recipes over there than I do here! Greek Salad Dip 1 cucumber 24 oz. greek yogurt 1/4 cup extra virgin olive oil, plus more for drizzling 3 garlic cloves, grated 1 lemon, zested and juiced Handful of fresh mint leaves, chopped, plus more for garnish 8 oz. feta cheese 1 shallot, minced Handful of kalamata olives, chopped 1/2 pint cherry tomatoes, quartered Salt and pepper, to taste Use a box grater to grate the cucumber into a clean kitchen towel; squeeze the water out and discard water (or use for a cocktail.) Add cucumber to a large bowl with yogurt, olive oil, garlic, lemon zest and juice, mint and feta. Whip or stir vigorously until fluffy. Stir in shallot, olives and tomatoes and season to taste with salt and pepper. my best hot dog recipes for hot dog summer 🌭 full recipes are pinned on my Instagram (same handle) and the frito pie dogs are below 👇 FRITO PIE HOT DOGS 8 hot dogs 2 Tbsp. oil 1 large onion, chopped and divided 3/4 lb. ground beef 2 Tbsp. tomato paste 2 tsp. chili powder 1 tsp. garlic powder 1 tsp. onion powder 1 tsp. paprika 1 tsp. salt 1/2 tsp. cayenne pepper 1/2 tsp. black pepper 1/2 bottle beer 2-3 Tbsp. ketchup 8 hot dog buns 16 oz. cheddar cheese, grated Chopped jalapeños, for garnish Fritos, for garnish Preheat oven or smoker to 400F. I like to throw the hot dogs in for about 10-15 minutes to warm through and crisp on the outside; alternatively you could grill them until they are charred to your liking. Heat oil in a large skillet over medium-high, then add half of the onions and ground beef, stirring occasionally, until meat is no longer pink and starts to brown, about 5 minutes. Add spices and turn heat down to medium; continue cooking, crumbling with a wooden spoon, until the meat is nicely browned, another 10 minutes. Add tomato paste, stir for one minute, then deglaze with beer and add ketchup. Cook for another 3-5 minutes until meat has absorbed the liquid. Remove from heat. On a baking sheet lined with foil, add hot dog buns with a layer of cheese on the bottom. Top with hot dogs, chili and remaining cheese. personal pan tomato and goat cheese tart 3 Tbsp. olive oil, divided 1 store-bought pie crust 4 oz. garlic and herb goat cheese 2 large tomatoes Salt and freshly ground black pepper Fresh basil, for garnish Preheat oven to 425F. Coat a 12-inch cast iron skillet (or medium-sized baking sheet) with one tablespoon of the olive oil, then add pie crust. Spread goat cheese on the pie crust and top with a layer of tomatoes; season with salt and pepper. Curl the edges of the pie crust over the tomatoes and brush with another tablespoon of the olive oil. Bake in preheated oven until crust is browned, about 20 minutes.
